Salmon Bowl
In my opinion, everything eaten out of bowls is just better.
For the Salmon:
1 lb salmon
2 tablespoons of blackened seasoning
1 tablespoon of olive oil
Heat a pan with 1 tablespoon of oil on medium heat. Season the salmon with 2 tablespoons of blacked seasoning or more to your liking. Once the pan is heated, place salmon skin side down and cook for 4 minutes undisturbed, then flip and cook for another 3 minutes. Once done, remove from heat and set aside.
For the Potatoes:
3 large gold potatoes or a handful of fingerling potatoes
1 tablespoon of olive oil
1 teaspoon of salt
½ teaspoon of black pepper
½ teaspoon of garlic powder
Preheat the oven to 350 degrees F. Wash and dice potatoes into 1 inch cubes. Season the cubed potatoes with 1 tablespoon of olive oil, 1 teaspoon of salt, ½ teaspoon of black pepper, and ½ teaspoon of garlic powder. Mix thoroughly and place on a lined baking sheet. Bake for 30 minutes or until fork tender.
For the Quinoa:
1 cup of quinoa
2 cups of water
2 smashed garlic cloves
Add 1 cup of quinoa and 2 smashed garlic cloves to 2 cups of water in a small pot. Bring to a boil and then turn down the heat to low. Once water is absorbed fluff with a fork and set aside.
For the Cilantro Garlic Sauce:
1 bunch of cilantro
1 cup of mayonnaise or 1 cup of plain greek yogurt
2 tablespoons of lemon juice
1 teaspoon of salt
½ teaspoon of black pepper
1 teaspoon of sugar
1 teaspoon of dried parsley
1 teaspoon of garlic powder
Add 1 cup of mayonnaise or 1 cup of plain greek yogurt to a bowl. To the bowl, add finely chopped cilantro, 2 tablespoons of lemon juice, 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of sugar, 1 teaspoon of dried parsley, and 1 teaspoon of garlic powder. Mix thoroughly until well combined and set aside.
To assemble the Salmon Bowls:
Place the desired amount of quinoa to the bottom of a bowl. Add the seared salmon, potatoes, and cilantro garlic sauce. Add more toppings if desired.
